Now that my oldest is in school full time breakfast can be a little chaotic. I try to get something good in his belly before he heads off to school. However, giving him the same thing every day is something he isn’t into (I eat the same thing every single morning!). I have a few things on rotation that help keep him engaged with eating breakfast.
Grinchy French Toast! - A kiddo favorite. I get a loaf of brioche for this but you can use any bread you like. In a blender I add 2 eggs, spinach, a banana, vanilla, and milk. I usually make the whole loaf on a weekend and freeze the rest to pull out for a weekday. This came from Zaynes Plate. If you don’t already follow her you absolutely should. She gives great inspo!
Frittata - I throw anything in them, but it is such an easy way to get some protein in with a side of fresh fruit.
Dippy Eggs - A house fav. I toast the bread up and cut it into strips for ideal dipping.
Oatmeal - I try to stick to the stovetop as the boys like it better that way. Mash a banana up in it and some cinnamon and you’re good to go.
Banana Pancakes - Mash a banana up with an egg add cinnamon and you have a simple “pancake” that your kids will love. The banana caramelizes in a skillet beautifully.
